Asterix On Menu Near Buttermilk Pancakes, Not Animal-Derived Food Inspectors with the Rappahannock Area Health District visited 30 restaurants between Oct. 21 and Oct. 30, finding violations at 12 of them.

FREDERICKSBURG, VA — Rappahannock Area Health District inspectors visited 30 Fredericksburg food establishments between Oct. 21-30, finding health code violations at 12 of them.

At 0ne of the restaurants, an inspected seeing an asterix on the menu placed near Buttermilk pancakes, French toast, Belgian-style waffle; and Kid's plate.

"The asterisk should be next to the animal food that is offered made to order," the inspector wrote in their report. "There should not be an asterisk next to the kid's menu."

As a corrective action, the restaurant was reminded to "include asterisking the animal-derived foods requiring disclosure to a footnote."

  • The shredded cheese (55'F) and sliced tomatoes (48'F) were cold holding at improper temperatures in the service line undercounter reach in cooler. Items had been placed in the unit at 10:00 am. Items were relocated to the walk in cooler and a service call was made. Corrective Actions: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • The floors under the equipment in the dishroom were observed soiled. Corrective Actions: Clean the physical facilities at a frequency necessary to ensure the protection and safe preparation of food.

  • The person in charge was unable to provide a valid certified food protection manager certification. Corrective Actions: At least one employee with supervisory and management responsibility and authority to direct and control food preparation and service shall be a certified food protection manager. This person shall show their proficiency of required information by passing a test that is part of an accredited program.
  • Observed the cutting board at the prep cooler and several cutting boards hanging up in the back area soiled/stained. Corrective Actions: Equipment food-contact surfaces and utensils shall be clean to sight and touch.
  • Observed the blade of the can opener and the plastic shield/deflector inside of the ice machine soiled. Corrective Actions: Surfaces of utensils and equipment contacting food that is not time/temperature control for safety food shall be cleaned at a frequency specified by the manufacturer or absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold.
  • Observed the yogurt cups in a tray on ice in the customer self-service area holding at 50-54 degrees F. The items will be voluntarily discarded. The yogurt should be submerged in the ice not just sitting on it in order to maintain a temperature of 41°F or less. Corrective Actions: Time/temperature control for safety food shall be maintained at 41°F (5°C) or less.
  • Observed on the menu an asterisk next to the following: 1. Buttermilk pancakes; 2. French toast; 3. Belgian-style waffle; and 4. Kid's plate. The asterisk should be next to the animal food that is offered made to order. There should not be an asterisk next to the kid's menu. Corrective Actions: Reminder shall include asterisking the animal-derived foods requiring disclosure to a footnote.
  • The person in charge was unable to provide a thin probe thermometer. Corrective Actions: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish fillets.
  • There was no irreversible registering temperature indicator for the high temperature dish machine. Corrective Actions: In hot water mechanical ware washing operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the utensil surface temperature.
  • Observed the outside of the reach-in coolers, prep cooler, and dish machine soiled. Corrective Actions: Non-food contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

Shall not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.
  • Observed the interior and exterior of equipment in need of cleaning. Corrective Actions: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

  • The person in charge was unable to provide employee health documents .EHS provided a sample to the person in charge. Corrective Actions: The Person in Charge or certified food manager shall inform all food employees and conditional employees of their responsibility to report any information about their health and activities as they relate to diseases that are transmissable through food as specified under 2-201.11(A).
  • Observed several flying insects thoughout the facility. EHS advised the person in charge to contact their pest control services to further assess the issue. Corrective Actions: Insects and other pests are capable of transmitting disease to people by contaminating food and food-contact surfaces. Routinely inspect incoming shipments of food and food supplies to control the presence of pests on the premises.
  • Observed six hanging insect control device with exposed dead insects above the three compartment sink and dry storage area . During the inspection the person in charge removed and discarded devices. Corrective Actions: Install the insect control device away from a food preparation area so that dead insects and insect fragments are prevented from being impelled onto or falling on exposed food, clean equipment, utensils, and linens; and unwrapped single service and single use s. Exposed food and food-contact surfaces must be protected from contamination by insects or insect parts. Installation of the device over food preparation areas or in close proximity to exposed food and/or food contact surfaces could allow dead insects and/or insect parts to be impelled by the electric charge, fall, or be blown from the device onto food or food-contact surfaces.
  • Observed the following non food contact surfaces in need of cleaning: 1. Interior of reach-in coolers 2. Exterior of cooking equipment 3. Exterior of ice machine 4 . Upsplash of soda machine. Corrective Actions: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
  • Observed walls ,floors and ceilings ( including air vents ) are in need of cleaning. Corrective Actions: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

  • Observed the outside of equipment and the up splash of the drink dispensers soiled. Corrective Actions: Clean non-food contact surfaces of equipment as often as necessary to keep them clean.
  • Observed only an atmospheric vacuum breaker on the mop sink, there is a Y-connector with a long hose connected on one side, the other side goes to the chemical dispenser that has an internal backflow prevention device. The person in charge ordered a dual-check valve to attach between the Y-connector and hose. Corrective Actions: A plumbing system shall be installed to preclude backflow of a solid, liquid, or gas contaminant into the water supply system at each point of use at the food establishment, including on a hose bibb (threaded faucet) if a hose is attached or on a hose bibb if a hose is not attached and backflow prevention is required by law by: 1. Providing an air gap; or 2. Installing an approved backflow prevention device.

  • Observed ceiling tiles in the back of the house which are peeling or chipped. Also observed multiple ceiling tiles which are not tight to the ceiling frames. Corrective Actions: Repair the physical facilities. Poor repair and maintenance compromises the functionality of the physical facilities.
  • Observed ceiling tiles above the beverage equipment in the dining room are porous and not smooth or easily cleanable. Also observed the floor of the walk in freezer is not smooth or easily cleanable on the left side and missing floor tiles (1-2 tiles) behind the bread oven. Corrective Actions: Indoor floor, wall, and ceiling surfaces under conditions of normal use shall be nonabsorbent for areas subject to moisture such as food preparation areas, walk-in refrigerators, warewashing areas, toilet rooms, mobile food establishment servicing areas, and areas subject to flushing or spray cleaning methods.

Corrective Actions: Potentially hazardous foods shall be cooled from 135°F to 70°F within two hours and to 41°F within a total of six hours to prevent the growth of harmful bacteria. Foods that have been temperature abused are to be discarded.
  • Facility is cooling large qauntities of foods in large stainless pans .EHS discussed with the person in charge proper cooling methods. Corrective Actions: Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.
  • Observed no food employee wearing hair restraints while preparing foods. Corrective Actions: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food clean equipment, utensils, and linens, and unwrapped single-service and single-use s.
