Observed employee remove large stock pot of soup that had been cooking on the stove, temping at 146°F and was going to place pot straight into the refrigerator to cool. Corrected. Soup was removed from cooking pot, placed into a shallow container and will be placed into refrigerator to cool. Education was provided on proper cooling procedures to get product under 41°F within 6 hours.

Parma Pizza, 1041 Haines Rd. York, September 10. Pass. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Employee foods/drinks are stored in direct contact with on the same shelf with and directly above foods intended for use or sale in the facility. Food employees observed in pizza area, not wearing proper hair restraints, such as nets or hats. Food (chicken wings and shaved steak) inside the bottom compartment of the sandwich bain marie stored open with no covering. Observed in-use knife stored between two layers of soiled cardboard. Exposed food preparation observed in sandwich bain marie area under dirty, crumbling/deteriorating ceiling tile, and subject to potential contamination. Observed accumulation of static dust on ceiling vent and tiles in the pizza oven sandwich preparation area. Cooked burgers and sliced pepperjack cheese foods were held at 54-58°F, in the sandwich bain marie area, rather than 41°F or below as required. Discarded and valued by manager at $11.50. Commercially processed refrigerated, ready to eat, time/temperature control for safety food (pepperjack cheese and lunchmeats), located in the sandwich bain marie, and held more than 24 hours, are not being marked with the date it was opened. Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the cooked shaved steak and chicken wings, are not being date marked. Capicola ham and sliced turkey, refrigerated, ready to eat time temperature control for safety foods inside the walk-in cooler, were date-marked by the facility, but was beyond the 7 day use or sell by date and requires discarding. Discarded valued by manager at $15. Time in lieu of temperature being used in the food facility to control ready to eat potentially hazardous foods (variety of pizzas) without written procedures or documentation to verify disposition of food. Food slicer and can opener cutting blade, food contact surfaces, were observed to have food residue and were not clean to sight and touch. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Observed clean food equipment and/or utensils on storage rack in the three basin sink area, stored uncovered or not inverted. Cleaned and sanitized utensils located in clean small-wares area, are stored with food contact surfaces/food or lip area exposed to hand contact when retrieved by food employees. Customer self-service single-use tableware is not displayed in a manner so that only the handles are touched by customers. Tableware for customer self-service is not displayed so that only handles are touched by consumers and employees. Cleaned and sanitized utensils located in clean small-wares area, are stored with food contact surfaces/food or lip area exposed to hand contact when retrieved by food employees. Fryer and mixer areas of the food facility are extremely dirty, dusty, and in need of cleaning.
