Nuevo Modern Mexican hosts 6-course fall wine dinner on Nov. 16

CLEVELAND, Ohio - Cleveland-based Nuevo Modern Mexican & Tequila Bar is holding a six-course fall wine dinner from 6 to 9 p.m., Saturday, Nov. 16. It will be in the restaurant's second-floor event space overlooking Lake Erie and the Cleveland skyline.

Wines will be paired with dishes prepared by executive chef Cory Sprouse and executive catering chef Julian Lee.

Foie Gras: puff pastry, chicken liver pate, mushroom-olive tapenade, blackberry-fresno gel. Wine: Kila, Cava Sparkling Wine 2021

Flounder Roulade: scallop-saffron farci, salmon roe butter, squid ink tuile. Wine: Lagar da Condesa, Rias Baixas Albarino O Fillo da Condesa 2023

Roast Quail: fig & maple sausage filling, fried leeks, parsnip foam, orange gastrique. Wine: Bernabeleva, Vinos de Madrid Camino de Navaherreros Tinto 2022

Striped Ravioli: beet and squash house pasta, red wine braised beef cheek, wild mushrooms, English peas, smoked mushroom broth. Wine: Rosario Vera, Rioja Tempranillo 2021

Smoked Duck: potato pave, roasted carrots, port wine demi, carrot & beet gel. Wine: Triton, Tinta de Toro 2022

Beignet: sweet potato, apple-ginger caramel. Drink: spiced pumpkin cocktail.
