Taps inside former Hough’s in Greenfield will flow once again with beer from Mondays Brewing Co.

Sam Fee was looking for a brewery to have a beer on a Monday.

He found many were not open.

So, he did something to quench his thirst.

He opened Mondays Brewing Co. on Waterdam Plaza Drive in Peters in October of 2020 — yes, during a pandemic. He had signed a lease prior to the covid-19 shutdown.

"Before the pandemic most breweries weren't open on Mondays. And I thought if I want a beer on a Monday, where can I go?" Fee said. "Now there are more that are open on Mondays."

And that will include his latest venture.

Fee said he found the perfect spot for a second location inside the former Hough's Taproom in Greenfield, which closed in May 2023 after nearly two decades.

Mondays Brewing Co., which is leasing the space, is looking to open by the end of October. Fee said he is waiting for final permit and inspection approvals.

"I fell in love with Greenfield," Fee said. "It's a wonderful community and we want to be a vital part of that community. We want to be involved in events like the annual holiday parade and everything that's happening in the neighborhood."

Hough's is three times the space of the Mondays Brewing in Peters, Fee said.

The plan is to craft specific beers for each location. All brews will still be brewed in Peters. Mondays Brewing makes styles of beer from lagers to IPAs and sours because there are "very few beers that I don't like," Fee said.

When the brewery opens it will be serving snacks such as pepperoni rolls, soft pretzels and chips and salsa. In Peters, they've been collaborating with other local businesses for food. Fee hopes to do something similar in Greenfield. He also said he is looking to partner with someone to run the kitchen sometime next year.

Guests may bring in their own food until the kitchen is up and running. Fee suggests buying food from other local establishments in Greenfield and pairing it with a drink from Mondays Brewing.

"We want to know what Greenfield likes to drink," Fee said. "There is so much history in Greenfield. We are passionate about continuing the tradition of what Hough's was to the neighborhood. We want to be the local pub people gather to enjoy a beer with family, friends, or co-workers — everyone is welcome — and chat, watch a game or just relax."

Mondays Brewing will carry homemade cider from The Greenhouse Co-Op next door, which opened at the end of December. Mondays Brewing will also serve Pennsylvania spirits and have guest taps. He said one of those will be from nearby Hazel Grove Brewing in Hazelwood, which opened earlier this summer.

Fee also plans to showcase beers from places in the Hazelwood Collective. Fee said he believes Hazel Grove and the Hazelwood Collective of Abstract Realm and New France Brewing along with Mondays Brewing will make a fun "brewery hop" day.

"We want to support everyone," said Fee, whose website says "Everyone deserves a good beer on Monday!"

A college professor who teaches web and mobile app development as well as digital media, Fee said he wanted to open a brewery because not only did he want the option for a beer on a Monday, but he also has an interest in the art and science of brewing. He said he thought of changing the brewery's name once more places opened on Mondays but he had a following and didn't want to rebrand.

"Through hard work and perseverance we made it through the covid-19 shutdown," Fee said. "Customers got to know us by Mondays Brewing. I am so proud of my team that we got through that time and that we are now able to open a second location."

Mondays Brewing Co. will be opening a second taproom at 563 Greenfield Ave. in Greenfield.

To start, hours will be 4 p.m. to 10 p.m., and some days until 11 p.m. Thursday through Monday, of course. More days will be added.
