Foods were held at 123°F in the right side of the hot-hold unit in the deli area (beef, pot pie) and 120°F in Hot Hold Case #1 (sandwiches), rather than 135°F or above as required. The sandwiches in the hot hold case were able to be transferred to Hot Hold Case #2, and the products in the deli hot hold unit were thrown away. Work orders were put in to repair both pieces of equipment.
