The chicken was immediately placed back in the rotisserie for continued cooking. Temperature was then found to be 181°F. Inform/remind staff of proper cooking temperatures and procedures. Deli & Bakery: Cardboard boxes observed being used to store supplies. These are absorbent and not easily cleanable. Remove. Deli: In the Deli storage room, provide shelving/dunnage racks for the storage of the paper goods that allows easy cleaning; Repair/replace the shelving where the Crisco is stored. General: A new type of paper towels are being used at the handwashing sinks but were not properly loaded in the dispensers. Maintain in good repair and paper towels easily accessible. The mop sinks in the Deli and Meat Departments are cracked. Repair or replace. Deli: At the 3-compartment sink, the concentration of multi-quat sanitizer was found to be only 100ppm; the bag of sanitizer for the dispenser was found to be almost empty. The bag was replaced and sanitizer then found to be 300ppm. Maintain. Deli: Metal pans observed with food residue and/or heavy grease accumulation. Bakery: Observed sheet trays and other baking pans, with encrusted grease and soil accumulation. Maintain in clean condition. Produce: Clean the lid of the trash can and maintain in clean condition. Bakery: At the mechanical dishmachine, the wash and rinse gauges did not appear to move and the dish surface indicator did not change (indicating final dish surface temperature 120°F; Adjust to 85°F+ but maintain at a temperature comfortable for handwashing). Meat: Leak at drain of 3-compartment sink; repair the drain stopper mechanism at the sanitizing compartment. Men's Toilet Room (Back): The left urinal is not flushing properly. General: Clean the outer surface of the red grease container located in the parking lot. Maintain in clean condition. Grocery Pick-up/Online Ordering Area: The exterior door is not tight-fitting in the frame. Make all necessary repairs to ensure the doors are tight-fitting. Clean the following: Deli Department, Wall behind the 3-compartment sink; Perimeter of floor in the warewashing and cooking area; At several areas, an accumulation of water observed. It was indicated that it was from cleaning the previous evening. Ensure excess water is removed from floor when done cleaning to prevent vector harborage. Produce: Floor under pallets in the prep area Men's Toilet Rooms (both): Clean wall and floor surrounding the urinals. Meat Department: Wall under the 3-compartment sink. Repair the following: Men's Toilet Room (Front): Replace the missing cover for the floor drain Women's Toilet Room (Front): A section of the ceiling is water-stained. If there is a leak, repair the leak. Repair the ceiling to provide a smooth, easily cleanable surface. Produce: Floor tiles around the floor drain in the prep room are in disrepair. Comply everyday. Cups of cut cantaloupe were held at 51°F, in the 1 Door Continental Refrigerator on the serving line rather than 41°F or below as required. The air temperature was 49°F. The outside digital thermometer registered 37°F; this must be repaired or replaced within 7 days. Water was also observed dripping into a plastic pan on the top shelf inside the unit. All food inside was discarded on site. Do not use this unit until it is repaired and can maintain foods at 41°F or less OR another commercial grade unit is installed and operating at the proper temperature. Correct within 7 days. Commercially processed ready to eat food, a container of jelly and a container of hummus-taken from their original containers- located in the walk in refrigerator, and held more than 24 hours, were not marked with the date it was opened. Corrected on site. Comply everyday. The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Review food code and retrain staff. Staff is not washing hands when required at the hand wash sinks. Several hands sinks did not have soap or paper towels, thus proper hand washing cannot be conducted. Staff was also observed donning gloves and starting food prep without first washing hands. Retrain staff on when and where to wash hands. Ensure compliance. Throughout refrigerators, expired and unwholesome ready to eat foods (produce, deli meat, prepared foods) were observed. Discard all such foods. Routinely monitor dates and food quality. Ensure foods in refrigerators and freezers are identifiable, safe, organized and properly rotated. Employee observed chopping cooked chicken (for chicken salad) with his bare hands. Bare hand contact with ready to eat food is prohibited; thus, gloves or utensils must be used when handling such foods. Throughout refrigerators, many TCS foods (deli meats, cheeses) were found without date labels. All prepared food and opened packages of TCS foods must be dated and used within 7 days. Provide date labels. In the customer self-service retail area, prepackaged foods (cake slices, lobster ravioli) are not labeled properly as labels are missing the ingredients, sub-ingredients and/or declared allergens. Provide proper labels on all individual packages. Remove all aluminum foil liners from the countertops, refrigerators, splash guards and other areas. Replace all missing hood filters in the hood. All broken refrigerators and freezers must be repaired and used as intended OR removed from the facility. No units can be used for dry storage. White merchandiser in grab & go area observed with ambient air & TCS food (such as meatballs, pasta) at 47°F, rather than 41°F as required. Discard all food in this unit. Remove this unit and replace with another NSF unit as this unit is covered in duct tape thus is not acceptable. Thermometers must be present inside each refrigerator and freezer. Stem thermometer must be present in order to take temperatures of both hot and cold foods. 3-bay sink must be properly supplied with detergent, sanitizer and sanitizer test strips and all food contact equipment must be properly warewashed. Clean & sanitize all food contact surfaces such as utensils, cutting boards, deli slicers, and can openers. Clean the interior and exterior of all food service equipment including sinks, tables, countertop, shelves, refrigerators, freezers, cooking equipment, storage containers. At front of house hand sink, rags and food contact equipment were found in the sink's bay. Hand wash sinks are for hand washing only. Remove all items from sink bay and warewash the equipment. Clean sink. Keep sinks accessible at all times. Grease trap must be professionally cleaned and serviced. Overflowing dumpsters observed in the rear exterior of the property. Remove all trash and debris today and clean surrounding pavement/grassy area. Observed bedding, recliner chair and clothing materials in the food facility, indicating use of the food facility as living or sleeping quarters. Remove all such items. Facility may not be used for any sleeping/residential activities. Exterior door located in the rear facility is broken and frame is not secured to the wall, thus gaps are present resulting in vector entry. Replace to reattached door and ensure all gaps are eliminated. Keep door closed. All hand wash sinks must be provided with hand soap and paper towels. Clean all floors, walls and ceilings throughout the facility. Moderate fly activity observed throughout the facility (interior & exterior). Facility must take aggressive measures to control, reduce and eliminate flies. Complete the following: Certified Pest Control Operator must service facility; Clean and sanitize all food contact and non food contact surfaces the flies are landing on; Keep exterior windows and doors closed and eliminate any entry points. Many pieces of broken and/or unused food service equipment, clutter, tools, debris and excess s found inside facility and in glass vestibule. Remove all such items and organize remaining items. Remove all soiled rags found on floors, around refrigerators, in piles and throughout other areas of facility. Soiled rags must be stored in a sanitary manner until laundered. Post the CCHD Certified Food Manager (CFM) Certificate in public view.

Observed time/temperature controlled for safety foods in the new self-serve cold wells of the Main Kitchen at 50-60°F as opposed to 41°F or below as required to prevent harmful pathogen growth. Facility keeps food from 11-2 p.m., utilize a time as a control log, or maintenance the machines to hold foods at 41°F or below. Time/Temperature Controlled for Safety ready-to-eat foods, sliced deli meats, were not being date marked in the walk-in meat refrigerator of the Main Kitchen. Ensure to utilize 1-week date marking for when the deli meat packages were opened. Food facility does not have available quaternary sanitizer test strips to determine appropriate sanitizer concentration for the 3-compartment sink and sanitizer buckets of the Starbucks Cafe. Person in charge obtained test strips from the Main Kitchen during inspection. Clean the following of any dust buildup or debris: The fan covers in the prep box walk-in and the meat walk-inl The floors of the prep box walk-in. The hot water used for sanitizing in the mechanical warewashing machine of the Main Kitchen did not reach 180°F. Maintenance this machine and provide invoice. May wash dishes in the mechanical dishwasher but they must be sanitized afterwards in the 3-compartment sink. Observed old food residue on a dirty sponge in the handwash sink of the main kitchen indicating use other than handwashing. Ensure hand sinks are kept clear and used for handwashing only. Mops are not being hung to air dry in the utility closet of the Student Center. This could result in potential pest harborage. Replace the broken mop hanger clips.

Foods must be used within 7 days of date food is placed in refrigerator to thaw (if it was frozen on date cooked).

In the dessert display case, the side not covered by a curtain was holding foods at 43°F, rather than 41°F or below as required. Replace curtain or adjust unit to hold foods at 41°F or below in all sections of the unit. Since foods were within 2°F of 41°F, no TCS foods needed to be discarded at this time, but they must be moved to the side of the unit covered by a curtain, or to another working refrigerator. The drinks display case was holding drinks at 48°F, rather than 41°F or below as required. The only item in the case that needed to be refrigerated was the POM juice. 8 containers of POM juice were discarded. Unit will only be used to hold commercially prepackaged, shelf-stable drinks. The chlorine test strips on location were not accurately reading chlorine concentrations in the dishwasher. Sample pouch of 15 test strips provided for sanitizer in use. Obtain new chlorine test kit within a week. The paper towel dispenser by the front handwash sink was initially empty. Hand sinks must be stocked with soap and paper towels at all times. Paper towel dispenser was refilled on location. Ceiling tiles missing in the mop closet, and need to be replaced.

Michelangelo's Italian Restaurant LLC, 1223 Horseshoe Pike, Downingtown, September 10. Fail. Eggs were being stored above vegetables. Make sure eggs are always stored on the bottom shelf to ensure no cross contamination. Avantco pizza prep unit had a temperature between 45°F and 50°F. All TCS foods were removed and thrown away (cut tomatoes and cannoli cream). Unit temperature turned down on site. Do not store any TCS items in this cooler until it is serviced or reaches an internal temperature less than 41°F. Single door avantco freezer had ice dripping from the line. Make sure ice is cleared away and unit is serviced. 2 handwash sinks were blocked by chairs at the beginning of the inspection. Chairs were moved immediately. Make sure handwash sinks are not blocked by anything.

Calamari observed thawing in standing water which is not an approved thawing method. Use an approved thawing method below: (A) Under refrigeration that maintains the FOOD temperature at 41°F or less; or (B) Completely submerged under running water: (1) At a water temperature of 7°0F or below, (2) With sufficient water velocity to agitate and float off loose ps in an overflow, and (3) For a period of time that does not allow thawed portions of READY-TO-EAT FOOD to rise above 41°F, or (4) For a period of time that does not allow thawed portions of a raw animal FOOD requiring cooking as specified under 3-401.11(A) or (B) to be above 41F, for more than 4 hours including: (a) The time the FOOD is exposed to the running water and the time needed for preparation for cooking, or (b) The time it takes under refrigeration to lower the FOOD temperature to 41°F; (C) As part of a cooking process. Housemade "claw" mixture, a potentially hazardous ready to eat food requiring datemarking, in the walk-in cooler, was beyond the date-marking and requires discarding. Container was discarded during the inspection. Temperature measuring device for ensuring proper temperature of equipment was not available or readily accessible in shellstock display case. Thermometer was placed inside case during the inspection. Observed food equipment unprotected and stored outside which is subject to potential contamination. Discontinue outside storage of food equipment. The handwash sink in the prep area observed being used as a food preparation sink as evidenced by observed calamari thawing inside a container in the sink. Calamari was removed. Handwashing sinks are to be used for handwashing only. Observed chemicals stored in prep area on shelving above and directly next to produce. Tomatoes were relocated during the inspection.
