New restaurant makes nachos the main focus

(COLORADO SPRINGS) — The owners of Odyssey Gastropub have opened a new Colorado Springs restaurant focusing on nachos and officially opened their doors this month.

Nacho Matrix is located at 2722 North Cascade Avenue near East Fillmore Street and North Nevada Avenue. According to the Downtown Partnership, Nacho Matrix is the city's first nacho-specific restaurant.

The menu will feature classic nachos with ground beef and queso, as well as Aloha nachos with pulled pork, fried spam, pineapple, and more Hawaiian flavors, along with other specialty menu options.

The restaurant has a partnership with Goat Patch Brewing and if guests want to hang out at the brewery, they can still order and pay for a meal from the restaurant, getting a text when the food is ready to be picked up.

"We've owned the URL nachomatrix.com for 10 years," said Co-Owner Jenny Sherman. "This has been nearly a lifelong dream for us, so we are so excited to finally bring it to fruition."

The hours for the restaurant are 11 a.m. to 10 p.m. Sunday through Thursday and 11 a.m. to 11 p.m. Friday and Saturday.
