New restaurant "Seis" to bring Mexican cuisine with a "modern twist" to Downtown Kenosha

A restaurant that has been years in the making is soon to materialize in Downtown Kenosha.

Rockitacos owner Rob Guerrero said he plans to open his new restaurant, Seis Modern Cocina, 616 58th St., in late October.

"We're not going to serve the same things that we do in the truck," Guerrero said. "This is going to be more sit-down, authentic dishes that I was raised up with, but with a modern twist."

Within the restaurant, Guerrero is aiming to bring a welcoming and festive environment to enhance diners' experiences.

"This place isn't that big, but I think it's going to be more intimate," Guerrero said.

Guerrero, who first started Rockitacos as a pop-up tent business in 2018, before investing in the food truck in 2020, said he has had the property for three years.

"I've actually always wanted a restaurant, but we were doing (the tent pop-ups), and then we got the building, but then COVID hit," he said. "So it was like 'How are we going to open up and deal with COVID?' So that's why we started the food truck."

The most difficult part of putting the new business together, Guerrero said, has been "time."

"Being so busy with the food truck, and Carthage (College), juggling family life and then aside from the mechanicals, I've been doing everything pretty much myself," he said.

His favorite part about the new business?

"The end, I think, will be my favorite part," Guerrero said.

In the process of opening a new business, Guerrero said he has been receiving a lot of positive feedback, in addition to inquiries about when he will open.

"I think we'll be ok, because like I said, there isn't any other Mexican place (downtown)," he said. "I know we're bringing something different to downtown to the dining experience."
